Vincent Foti grew up in the restaurant business in NYC and has owned and operated food service businesses in NY and LA, as well as having thrived in a more formal corporate environment while employed by INHILCO., the food service management division of Hilton International. While with INHILCO, Mr. Foti worked his way up from busboy to management. INHILCO operated all food service outlets in the New York World Trade Center including Windows on the World, which was the highest grossing restaurant in America in 2000. After his tenure at  INHILCO, Mr. Foti went on to own and operate restaurants in both New York and Los Angles before relocating to South Florida

Mr. Foti is currently the creative force behind kitchenetta trattoria tipica italiana, where he is the owner, operator, and executive chef. A 75 seat classical Italian trattoria with a contemporary presentation, kitchenetta is located at 2850 N. Federal Hwy in Fort Lauderdale, FL. Now in its 9th year of operation, open 300 days a year in dinner-only service, kitchenetta has grossed over a million dollars annually since opening its doors in April of 2004. Gross sales at kitchenetta have steadily increased year over year since opening. Even more notably, kitchenetta thrived during 2008 & 2009 despite extraordinarily challenging economic conditions which saw the failure of many well established operations.

Chef Salzano grew up on Long Island, NY in a family and culture both in love with food. He brings to the table, a unique skill set, background, and formal culinary education which render him a great value to our team. Chef Salzano is a graduate of the Culinary Institute of America. In the past 15 years since his graduation, Mr. Salzano has worked his way through the ranks from line cook to sous chef, to executive chef. Chef Salzano has cooked at some of the best restaurants in America including the world famous Palm Steak House.

In the rapidly-expanding Fast Casual space, Chef Salzano was Chef and General Manger for Corporate Operations at Burger Fi restaurants. Burger Fi has grown to 38 units and is a leader in the Better Burger segment.

Chef Vincent Salzano is currently the head chef at Fort Lauderdale's acclaimed Italian restaurant, kitchenetta-trattoria tipica Italiana where he runs day-to-day operations in the from-scratch authentic Italian kitchen. Chef Salzano has been working closely with kitchenetta owner Vincent Foti to create chickenetta.

Eric Meloche

Like most restaurant professionals, Eric started working in the business as a teenager. After attending Michigan State University as a hospitality major, Eric became the GM at Filippa’s, a 275 seat, five million dollar per year full-service restaurant and banquet operation.

After 11 years at Fillipa’s Eric relocated to Fort Lauderdale where he worked as a senior training manager for California Pizza kitchen and then joined Anthony’s Coal Fired Pizza as New Store Training Manager. In this position he was responsible for new store openings and training. He was with Anthony’s from 2006 to 2008. Mr. Meloche is now the GM at kitchenetta trattoria typica italiana where he has worked for the past six years. Eric has been an integral part of the chickenetta development team.

Marv Steigman

Marv is a marketing and business management professional with over 25 years of experience, 11 of which spent in a C-Level position in the UK with what is now Virgin Media. Prior to that Marv was a pioneer in the cellular industry opening the first carrier-owned retail store in the late 80’s as General Manager of Cellular One in North Central Ohio.

Following his corporate career, Marv worked with several technology startups as Chief Marketing Officer and then started his own consultancy serving the SMB space. As a member of the chickenetta team Marv’s role is to develop and grow the brand while developing and maintaining consistency of image and messaging. He is also responsible for the creation of our pre-opening collateral.
